In order to pass on today’s pleasure to future generations, the Sala Fuochi comes back to life in the winter months during the eel fishing season. Even today, the Manifattura processes the fish according to the traditional technique, adhering to the production specifications of the Slow Food presidium for the defence and dissemination of food and wine traditions.
Reaching the Manifattura dei Marinati is very easy, just walk under the long Loggiato dei Cappuccini that connects it to the city centre.
